Gingerbread Tiramisu

Gingerbread is one of those classic December dishes that blends sweet and spice in the most delightful way, and fills your kitchen with the unmistakable aroma of Christmas.  Paired with freshly brewed coffee, it is the perfect way to start your holiday morning or end the perfect holiday party….but it was not until recently that I put the two together in a holiday pudding recipe inspired by Robin Miller, star of the Food Network Show, Quick Fix Meals with Robin Miller.

The recipe below has been adapted from her new book Robin Takes 5 and was put together while giving a spelling test to my daughter, and putting away the dishes.  The recipe serves 6 and takes 15 minutes to prepare.

Ingredients:

  • 24 Gingersnap Cookies (or home made gingerbread);
  • 1 Cup of freshly brewed Coffee or Espresso;
  • 3 Cups of heavy whipping cream;
  • Chocolate Bar for garnish.

Directions:

Pour the heavy whipping cream into a large mixing bowl and whip by hand using a whisk (you can always get out your mixer and do it there, but then you have more to clean up) until it is light and fluffy, usually 3-5 minutes.  In a shallow dish, lay your gingersnaps cookies flat and cover with freshly brewed coffee and allow to soak for 30 seconds for store bought cookies or 1 minute for homemade.  Once soaked, layer your cookies and the whipped cream in your serving dish or cup until you have the desired height and then top with a gingersnap cookie and garnish with chocolate shavings.  (Robin’s recipe is only 256 calories per dish, heaven knows how many this is).   Once built, put your pudding cups into the fridge to allow to set for a minimum of one hour before serving, or up to 24 hours if you are making them in advance of a big party.
