Slow cooked anything makes me weak in the knees…. and not just because you spend the whole day smelling the delights to come, but because it is a meal that cooks itself allowing you more time to unwind after a day spent juggling any number of daily events. Slow cooking is pure comfort, it tugs at the soul, and beckons you to curl up with a bowl to savor every moment. In my dream kitchen I have a pantry dedicated to dutch ovens, slow cookers, a hoard of tinned beans, and bags of pulses…. until the kitchen fairy graces me with such good fortune, I have a pantry busting at the seams the moment October rolls around.
