5 quick mid week meals for family cooking

I must confess, I am not a meal planner; try as I might, those well thought out meal plans never go according to plan.  Life gets in the way:  a phone call that runs late, extra homework that comes home, a spur of the moment board game, and those after school practices all leave us all scrambling at 5pm to put something, anything, on the table as quickly as possible.  And with as wild as mid week meals can be, our favorite part of the day is when cooking and family time interact.  In my new video series for Idaho® Potato,  I’m joined in the kitchen with my youngest son Xander, sharing our favorite mid week dinners where everyone in the family can get involved to create healthy and quick dinners in a flash.

I’ve got my Mom Goggles on with theses videos because 3 days before filming, I fractured my tailbone after learning that drinking coffee and walking is more dangerous at 40 than at 20…..Little 5 year old Xander, or “Xam Xam” as I call him, carried the video series and steals the show with his love of cooking and his devilishly cute charm.  What you don’t see in the series is that in between takes he gave me cuddles and kissed my back, which is why in the video below, he was so concerned about smashing my hand with the potato masher.  Let this be your warning to lock up your daughters, this little guy will capture her heart and cook her a great meal.
